Recipe: Fried zucchini flowers

Zucchini flowers (fiori di zucca) are not just pretty to look at with their bright yellow and orange colors, they taste amazing as well! I love fried zucchini flowers in beer batter and it’s so easy to do.

Ingredients for 4 servings

– 16 large zucchini flowers
– 350 gr (1 1/2 cup) all purpose flour
– beer
– salt
– oil for frying

Fried zucchini flowers

Put the flour in a large bowl and slowly add the beer, whisking it until you get a smooth batter that has the consistency of cream. Add a pinch of salt.

Break off the stem of the flowers (leave a couple on inches) and remove the small green leaves along the calyx. Carefully remove the pistil of the flower. Clean the flowers with a damp cloth.

Heat the frying oil to 180°C (375F). Dip the zucchini flower into the batter until it’s nicely coated and hold the flower over the bowl for a few seconds letting the excess batter drip off. Carefully lower the zucchini flowers into the hot oil in batches. Fry for 3-4 minutes, until crisp and golden brown. Remove the flowers from the oil using a slotted spoon and put them on a plate topped with a few layers of kitchen paper to drain the excess of oil.

Serve immediately, eat them while they are crispy and warm.
